Roast Chicken Pasta A Sunday favourite of mine, As I’m sure most people are aware that I like to create recipes that are not time consuming this recipe may not be quick but it doesn’t take much oy your time or work as the oven does it almost it all. I probably cook this for Sunday lunch more than anything else, it looks very simple but trust me it tastes so good. 1 x small Chicken (1 ½ kg) Small bunch thyme 2 x sprigs Rosemary 2 x garlic gloves ½ lemon 2 x bay leaves ½ tablespoon olive oil Sea Salt & cracked black pepper 300g Penne Pasta 2 x cups whole wheat penne pasta 2 x tablespoons pine nuts Large bunch parsley 1.        Preheat oven to 200C. 2.        Place Chicken into a large roasting pan. Rub the inside of the chicken cavity with a little of the salt and pepper, Fill the cavity with herbs, garlic and lemon. 3.        Roast the chicken in the hot oven for 1hr 20 minutes. Low Cal Creamy Chicken & Bacon Pasta

Chicken & Bacon Creamy Pasta This is my Irish take on a low cal Carbonara with chicken of course, too add that much needed protein. Instead of a heavy calorific cream sauce I use Quark a spoonable soft cheese, combined with a little pasta cooking water this melts into a deliciously creamy sauce. 3 – 4 Nests of tagliatelle Per person ½ teaspoon coconut oil 2   x chicken breast 2 x back bacon medallions 100g Quark Sea Salt & Cracked Black Pepper Large Bunch Parsley   1.        Bring a Large pot of water to the boil when almost boiling add salt. Cook pasta according to packet instructions. 2.        Whilst pasta is cooking, Chop bacon into small pieces and brown in pan with coconut oil. 3.        Remove a cup of pasta cooking water. Cut into largest chicken piece if all traces of pink are gone add the quark with and a little of the cooking water stirring after each addition until you get a double cream consistency. 4.        Drain
